Bay leaf (Laurus nobilis) is a perennial shrub belongs to the family laurel (Lauraceae). It has been cultivated throughout the European, tropical, subtropical, and Asian countries. It has been used for thousands of years for food flavoring, essential oil applications, and in traditional medicine.

Indian Bay leaves are also known as Tej Patta which translates as 'pungent leaf' or Malabar leaf. They are not to be confused with the European Laurel Bay leaves more commonly used in Mediterranean cuisine!

This aromatic herb is scientifically known as Laurus Nobilis, which comes from the evergreen bay Lauraceae family, native to Asia Minor and the Mediterranean region. Bay leaf is found in the tropical and subtropical Himalayas, the Nilgiri hills, the Khasi hills and Sikkim.

Bay leaves which are also known as tej patta, are longer and generally have are olive green in color. They are used extensively in Indian Cuisine to flavor curries and subzis but are also used in stews and soups in Mediterranean and American dishes.

Their taste is often likened to oregano and thyme, and the slightly medicinal, aromatic flavour works particularly well with warming spices like nutmeg and chilli flakes.
